If you haven't tried gnocchi in the air fryer yet, this is where you start. Crispy on the outside, soft in the middle and coated in a creamy feta sauce - it's simple, seasonal and seriously good.

Serves 2 

Ingredients:

  • 100g feta
  • 1 cup uncooked gnocchi
  • 1 cup broccoli florets
  • 3 rashers short cut bacon, chopped
  • ½ zucchini, chopped
  • ½ red onion, diced
  • 2 cloves garlic, roughly chopped
  • ½ cup chicken stock
  • Cracked black pepper
  • Spring onions, sliced, to serve
  • Parmesan, to serve

Method:

  1. In an unlined air fryer basket or tray, place the feta in the centre. Surround it with the gnocchi, broccoli, bacon, zucchini, red onion, and garlic.
  2. Pour over the chicken stock and season generously with cracked black pepper.
  3. Air fry for 15 minutes at 180°C, or until the gnocchi is tender, the bacon is golden, and the vegetables are cooked through.
  4. Remove and stir everything together until the feta turns into a creamy sauce coating the gnocchi.
  5. Top with spring onions and plenty of parmesan, then serve immediately.
