CHRISTMAS HASSLEBACK POTATOES

Ingredients:

  • 10 white washed potatoes
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 80g sliced ham
  • 80g brie (sliced into strips)
  • 10 tsp cranberry sauce
  • 2 tbsp roughly chopped parsley

Method:

  1. Preheat oven to 180 degrees
  2. Using a deep spoon or chopsticks on either side of the potato, hassleback the potatoes with a sharp knife (see video on socials for instructions)
  3. Marinade the potatoes with the olive oil, salt and pepper
  4. Place in the oven on baking paper for 20 minutes
  5. Remove potatoes from the oven and add the sliced ham and brie into every second/third potato cut
  6. Place back in the oven for 10 minutes
  7. Remove potatoes from the oven and top with the cranberry sauce and parsley
