Snowflake Bauble Cookies


  • 85 g/3ozs butter, softened.
  • 140g/5ozs white caster superfine sugar.
  • 1 egg, at room temperature.
  • 1 teaspoon vanilla.
  • 180g/6ozs all-purpose flour.
  • 1 teaspoon ground cinnamon

Royal Icing

  • 1 egg white (30grams/1 oz)
  • 1-2 teaspoons lemon juice
  • 180g sifted icing sugar
Step 1 Using a beater attached, beat the butter and sugar until pale and fluffy-about 3 minutes. Then add in the egg and vanilla and beat for 1 minute.  Then add in the flour and cinnamon by hand.
Step 2 Roll out between two large sheeting of parchment paper. Place on a baking tray and refrigerate for 30 minutes until firm.
Step 3 Cut out bauble shapes with a lightly floured bauble cutter dipping it in the flour between cuts. Place the shapes in the fridge for 15 minutes. Meanwhile preheat oven to 200C and line a baking tray with parchment and bake the cookies for 8-10 minutes until they are lightly golden. Allow to cool completely.
Step 4 Make the royal icing by adding all ingredients into a food processor and blitzing until smooth. You may need a little more or less icing sugar to become a pipeable consistency. Fill a piping bag with a tablespoon of royal icing and trace around the circle of the bauble and do some ridged detail at the top. Then draw different patterns in royal icing. Allow the icing to set completely before storing.
