Simple Poached Chicken and Fig Salad

PREP TIME : 10 MINUTES
COOKING TIME : 25 MINUTES
MAKES : 2 SERVES

 

INGREDIENTS:

  • 2 chicken breast fillets
  • 1 small avocado, cubed
  • 2 cups rocket + spinach leaves
  • 4 fresh figs, quatered
  • 2 tablespoons crushed walnuts
  • 2 tablespoons of balsamic glaze mixed with 2 tablespoons extra virgin olive oil 

Poaching Liquid
  • 4-5 cups boiling water
  • 1 cinnamon quill
  • 6 cardamom pods
  • Juice of 1 lemon
  • 2 star anise
  • 2cm piece ginger, thinly sliced
 

METHOD:

  1. Add water, spices and lemon juice to a small pan over a medium heat.
  2. When the water is boiling, reduce to a simmer and add the chicken.
  3. Cook for 20-25 minutes until cooked though. Remove from poaching liquid and allow to cool slightly before shredding.
  4. Meanwhile, assemble the salad by layering the leaves, avocado and figs.
  5. Add the chicken and top with crushed walnuts.
  6. Drizzle with balsamic dressing and enjoy immediately.
